Grapes are selected at full ripeness from Marlborough’s two winegrowing valleys, the Wairau Valley and the Awatere Valley. They are immediately pressed to stainless steel tanks. Yeast strains are selected to enhance Sauvignon Blanc specific aromas and fermentation is kept at cool temperatures to preserve fresh intense aromatics and fruit purity.
